T minus 24 hours

I'm excited.
I have been counting down the days, and they are almost here.
Disneyland, I'm coming.

Slowly (and I do mean slowly) this past week we have been getting ready for this trip.



  • Sunday, (although I didn't do it) was getting our suit cases out of the storage room. They just sat in the same spot until about yesterday when we started packing.

  • Monday, well I don't think there was anything Monday, at least not that I can think of.

  • Tuesday, it ended up being a planning day I guess. While I was at work I realized that I wanted to bring along a disposable camera as well as my digital camera. Went to Safeway after work looking for a snack and hoping to find a camera. Snack yes, camera no.

  • Wednesday, that was the busy day. No school, no work. Shopping: for school, scrapbooking, and trip. Yes, first was Target for the disposable camera, and new security for my computer (since it expires today). Then Staples for school supplies. Then was the post office (which isn't that important) and Michael's for scrapbooking stuff. I have been wanting to go there for a while and haven't had the chance, it was the perfect time to. Yay! Final stop was Office depot, for more school supplies and another memory card for my camera. If you didn't know I am planning to take a lot of pictures while I am in Disneyland.

  • Thursday, this day was laundry day and finally start packing. While I was at work my mom did a couple loads of laundry, my job was to hang the stuff up to dry once I got home. The basket of laundry sitting in the middle of the floor was a clue if I ever saw one. Laundry is dry, means we can start packing. Oh, and I had my last final, done!

  • Friday (that's today) is finish packing, and some last minute things. Like right now I just realized that the sunscreen I have is probably more then 3 ounces which means I need to go find a container or smaller sunscreen. Also check in with the airport, check in means we don't have to be there as early.
There are a few things that of course still need to be done tonight, and other things that can't be done until tomorrow morning. Let's just hope we have everything, checking that list twice, because I don't want to forget.
Disneyland, you are less then 24 hours away, and I can't wait!

 When I go back and think, I may not have taken a picture of the dinners I made.  Nope no picture of the Cajun fried rice or the Cajun chicken pasta .  I even tried to remind myself to take a picture of it as my lunch, and even that was a no.   Guess I'll start with the fried rice since I made that first.  I think it seemed simple enough, and I was almost positive I had all of the ingredients or if not a substitute, as I switched the brown rice out for white.  For the life of me I kept forgetting to look and make sure we had shrimp, but also take it out to defrost.  Our freezer is not that big, but the shrimp was all the way in the back behind baked goods, chicken, berries and a few other things I forgot were in there.   Shrimp came out and defrosted day of, although I don't think they were deveined so they took a little more prep work once the cooking started.  Side note, my coworker had mentioned making shrimp tacos and I thought...

  Yikes!  Did the last month or so get away from me or what.  I had honestly started this, well prepped this a month ago, and then apparently life happened.  So before I'm two months behind, what did I make in July.   I made lots of things with cream cheese, and if you keep up more will come, a because these mini cheese cakes were a bit of a cheat while I yet again wait on buying something that I may not have room for in my kitchen right now.  Yes a springform pan takes up less room then a stand mixer, but how often will I use it?  Actually if I had one I might use it as regularly as I am my muffin tin and donut pan.  Well, maybe not but at the rate I'm going at least once every couple months.   Now I went with mini cheesecakes to lets say ease myself into it.  I've had most if not all the ingredients for a month, and was just waiting for the right time, and I may have pushed back because cheesecake isn't really a summer treat...

List of Making

 I've got a few things scattered here and there, and pins saved for a rainy day but if I write them here maybe make myself more accountable they might be more likely to happen.  I thought about lasagna a few weeks ago, knew I had most of what I needed, just needed a recipe really.  Do I have my mom's recipe or is it one of those things that's more in her head but not written down anywhere?   I also talked to her about making chicken and dumplings to get her thoughts/input since I've got bisquick and I think it would go over well here.   Just went through my "recipe book" I typed up before starting college thinking I was going to be like my sister who had moved out a year before making all these fancy things for myself for dinner.  Makes me laugh what I put in it.  Mostly desserts, some snack or side dishes and maybe a few actual meals.  Way to go Carrie from ten years ago!
