Chocolate Zucchini Bread
We have a boat load of zucchini. My mom's trying to get rid of it because there is so much of it growing in the back yard and we can't seem to eat it fast enough. And really when you think about it, after a while you need to do something a little different with it. And with three people living in this house food tends to last just a little longer.
My mom had mentioned a few weeks back something about zucchini bread. She was talking to my cousin who said he doesn't eat zucchini, she was wondering if he would eat it if it was chocolate zucchini bread. He said no. So last Sunday we were talking and I finally said that I wanted to make muffins or bread with the Zucchini. Got out a cube of margarine, and got a big bowl and let it sit.
Days later the recipe was found and we put the two together. I had some spare time one day and was determined to make it. Although I hadn't realized that it was going to be necessary to grate the zucchini. I mean when we make banana bread it is two aged up bananas put in. I don't know what I was thinking really because I knew it wasn't a whole zucchini that needed to be put in I was just thinking there was a different way.
When my mom told me that I had to grate it I thought that it would be like grating cheese. Well, zucchini is a little harder or more formed, and lets just say not as easy to grate. I needed four cups since this was a double batch and the other thing about zucchini is that it needs to be strained. There is a lot of water or juices in zucchini and I don't think the bread needed to be as moist.
The recipe was for chocolate zucchini bread and I think at first my mom and I thought that the recipe called for chocolate chips, she was looking for them in her little hiding places for chocolate, but really I know where they are. Then while I was reading the recipe and talking to her on the phone I read that the recipe called for cocoa, which meant the powdered stuff not chocolate chips.

I had gotten a little worried while reading the recipe. I had mixed all of the ingredients together, or I guess started to when I read it say to pour the mix into the loaf pans. When I had read that the ingredients were not pourable, they were clumps, so I kept stirring in hopes that they would start blending together a little more. I had even reread the recipe to make sure I had put the right amount of all of the wet ingredients in, and I had. Kept stirring, and stirring and finally it looked like it should have.
