Pizza Muffins

 When my co-worker made us pizza tacos, my mind was blown.  She had made them at her last job, and said everyone loved them, they were good warm or cold, and they are so small to nibble.  We each got a couple to try and my boss (who worked with her before, and asked she make some) got a large bag of about twenty.  They are pretty good, and I've had my mind on making some myself ever since, but haven't had the chance.  Bought all the things, except maybe cheese, and was ready, though I might still need a cookie cutter.

If you couldn't guess I made muffins, and breads and a pie instead.  

 As I am still new to the state I continuously look for a weekend adventure, places to go, things to see and what delicious food Arizona has to offer.  Then last week, popped up in my news feed a place famous for its pizza muffins.  Now I can make that!

My initial thought was they must make it using the same basic things I use for baking muffins, I got this.  A search of the internet got me a few different recipes, and a few different looks for these muffins, I wanted to make as close to what the restaurant made as possible.  That being said, they are probably a little less pizza muffins, and a bit more pizza roll ups, maybe.  

First things first, I had to make pizza dough.  I used a good dough recipe my family has had for years, although store bought would have been just fine too. 

The pizza muffin recipe said to use half of the dough so instead I made twice the muffins.

My first try I went all in, reading as I went, roll out dough, top with butter/seasoning mixture then top with cheese and pizza toppings.  So I sauced it, and topped it.  Once that was done, we carefully roll until you've got a log, then cut the log into twelve even pieces.  I didn't get exactly twelve pieces, I measured nine, and recut and got ten.  Twelve minutes (or until golden brown) and they are done.  




First set cools, I finish reading the recipe that says dip in sauce... so the pizza sauce was for dipping not for topping.  That explains the extra saucy mess.  This makes me glad I didn't make them all at once, learning from mistakes, such as not flouring the counter enough, which made rolling the dough a bit more difficult.  Second set, is no pizza sauce, so you can actually taste the basil/garlic butter flavoring, but the same cheese and pepperoni toppings.  Could have been the difficult of rolling the first set, or that I rolled the short side of the dough instead of the long, but I almost got twelve out of the second set. 


I have tried the mistake/end pieces of each round of muffins.  They both came out pretty good, the ones with the sauce are still good, the ones without might actually need some sauce, but still have good flavor.  Nothing is burnt, they came out great, and while they don't exactly look like muffins, told you...roll ups, they will probably be gone as fast as muffins are.   Recipe found here.
