Almond butter Cookies

So while my parents were in Hawaii (how dare they not invite me) and they people they went with were on a Paleo type diet and so I'm guessing that is where my mom got the idea to use almond butter and almond flour for peanutbutter cookies instead of the regular stuff.
I had also found a new 3 ingredient almond butter recipe from Skinnytaste that seemed simple enough I could even do it at school.
Of course we went with my moms way to make these cookies, because apparently not using flour sounded a little strange.
 We had some slight hiccups during the mixing process.  Probably because of the texture of the almond butter or the almond flour, but it just wasn't sticking together, and a lot more liquidy then it should be.  Obviously something was wrong with the consistency, and luckily my mom knew how to fix it.  Her friend had used coconut flour to make cookies before, and said that did a good job at making the ingredients stick, we didn't have any of that so we would have to use regular flour to add in slowly and hoped that it helped.
 Finally we were able to get everything to stick without adding a lot of extra flour. The first batch went in, and seemed to cook pretty well.  The cookies just ended up being...gritty. I think it was because of the flour we used.  It might have been more of an almond meal then almond flour.
I mean this was my first time using almond flour so I didn't know what it was supposed to look like, but it didn't look like flour should.  It wasn't as powdery and a little more flaky, like I said more like almond meal.
 I mean the cookies were still edible, and trust me, they all got eaten, but it gave them a slightly different texture, and we actually had to wait for them to cool before taking them off the pan or they would fall apart.

My mom found some better almond flour, that looks like flour for next time.  Hopefully it works out better for us and sticks together a little more.

You are brave people! I'm usually scared to make any desserts with weird ingredients because I'm just absolutely convinced it'll never be as delicious. But these look pretty darn good! Especially those ones with the chocolate...yum...
