Oven ON

This past Saturday we had a potluck at work. My initial Sign Up was Salad. It was a recipe my mom found when she and my dad went out for dinner during the summer. My mom ordered the BBQ Chicken Chopped Salad at BJ's. Both she and I found it was delicious! When she made it for a reunion over the summer, it was a hit. Now lets try it with work.

Of course I signed up a week or so before the Potluck, and so through that week other ideas were coming to me. And I have to say, I was not the only one who was having problems trying to decide what to make/ bring to the potluck.

I had also wanted to make a bread, and the first thought was this Lemon bread that I hadn't made in a while. We had lemons, and so I decided to make that too.
Then I was thinking, it is a fall potluck, and I don't think either of the things I am bringing are very fall. The Lemon bread is more summer or spring, and the salad isn't fall. Then with the mention of pumpkin, I remembered the pumpkin bread my mom made last year. Now that was Fall!
This recipe came from (I believe) Cooking light. And if you read it all the way through, it makes two loafs. Oh, boy! Yeah my mom mentioned that it was going to be double, but I don't think I realized it, until I was in the process of mixing and making.

So the day before the Potluck, I didn't have to work and I got out of school early. Most of the ingredients were already home, but before I started, I had to go buy the butter milk and can of pumpkin. Then I was busy working non stop, first the pumpkin then the lemon bread.


The Fall Potluck seemed to be a success! Plenty of different foods to try, all different varieties. And of the items I brought it seemed that the Lemon bread was most successful. I even had a few people ask for the recipe.
