My Semi- Irish meal
I don't know about you, but at the beginning of last week (or lets say a few days before St. Patrick's Day) I got an email from pinterest giving me suggestions for different Irish breakfasts. This had me interested since it gave me a few more ideas on how to make breakfast or mix potatoes and eggs together.
The first one that caught my eye was literally the first or second one in the email, that basically looked like potatoes with a fried egg on top. I can do that.
Well actually it was a little more then that. The picture was of corned beef hash and eggs. My only dilemma at first was that I didn't have corned beef, which was fine, I could work around it. Then I start reading the recipe, okay cook potatoes in a pan, and then....make wells for eggs, crack eggs, and bake. That was the problem, the one fry pan that I use almost on a daily basis I knew wasn't oven proof, and while my roommate has an oven proof skillet, I wasn't about to use it just to cook this (especially since she wasn't home to tell me how to clean it). So there went that idea.
I did end up making some modifications to the recipe and making it my own.
I cooked the potatoes, added some spinach (because why not) and then added an egg to the center. The tricky part of it was having to flip the egg in the center of a bunch of potatoes, without trying to break the egg. Yeah I said it was tricky, and I'm still trying to work on it a week later, but at least it is something.
