Okay, I'll admit September was a bust. Did I make anything new from my list? No. I can't say it was that busy because October was busy and I still made baked plenty.
I did have a disappointing bake in September, if you follow my social media I posted a mango strawberry donut, which looked good and probably could have tasted good, but I modified it and maybe that screwed it up. I honestly wasn't happy with the taste, and maybe that is why the recipe called for mango puree instead of chunks of mango (mistake 1). Then there was the glaze it called for strawberry powder, which I don't think I had or have ever seen (maybe its not in the baking section of the store) but also I've done a blueberry glaze with actual blueberries and it came out well, why not with actual strawberries? Well, silly Carrie, because the glaze won't stick into the next day (mistake 2). Why did I want to modify this recipe? Because I thought it would be easier, and still taste good. Guess not.
Now that we have gone over the baking fail, onto October! I feel like I was busier in October then September, but still managed to do more in October, could be I was more motivated. Could be I was waiting on a few things to come into my possession.
First was the spring form pan, yes I could go to the store and buy it, and honestly I tried. Went to Target where I have gotten other baking supplies including the donut pan, and was not happy with what they offered. The target brand wasn't what I was looking for, and while I now realize I could have then walked to Bed Bath and Beyond to do more browsing I didn't. Instead my mid October trip got me what I needed.
Honestly this Blueberry Muffin Cheesecake had been sitting in my save folder since the beginning of the year, along with a few others so I was itching to bake it.
Not sure where to start with this, the fact that the 5 hr 35 min prep time scared me, or that the website had me sign up before they would share the entire recipe. Thanks tastemade! Luckily the 5 hours more had to do with resting and setting after baking then anything. So thirty-five minute prep time and one hour to bake, not bad, just needed to find room in the fridge.
The crust, both top and bottom, are made from the same materials, so not normal cheesecake crust, but more similar to the streusel topping I've made for muffins and bread before just in a larger capacity. Could be why the topping was more crumbly then I had hoped. For my first normal size cheesecake there were only a few small cracks, at least initially and I'd like to blame the blueberries for that. Then the topping technically covered them, but also had a few cracks of its own. Can't say I wasn't expecting it to happen, and even in the video they share there is plenty of cracks, so nobody is perfect.
…Speaking of not perfect. Here comes my first try and mini bunt cakes. I got a mini bunt pan for my birthday, Thanks mom and dad! This guy might join into the rotation of baking, even if this first recipe didn't go quite as planned.
This recipe for
Caramel Apple Mini Cakes says this should make twelve, so either my mini pan is to small or I accidentally pressed double recipe. Either way, I made way too many. The recipe does say put a
third cup dough mixture in after the the caramel apple mixture, and looking at my pans I knew a third cup was not going to fit, so I tried for a quarter cup, and they filled to the rim.
Batch one, they kind of over flowed a little bit. They looked good, but the extra edges I trimmed off because they were a bit crunchy. I guess that settled it, my pan was a bit smaller then hers.
Batch two, although not really batch it was the same dough, just a second bake. Bake two, I used an eight cup, they fit a little better in the pan, and no extra crusty edges.
While this was a bunt pan, you can't really see that they are bunt shape with the caramel mixture on top, so next recipe I'll work on that. Also please remind me that the pecan/apple pieces stick in the small groves of the bunt pan and take a little more time to clean out.
This month (November) and next might be a little redemption recipes and of course some new ones, with maybe some old mixed in since its the holidays and all. I swear I'm making food too, first time making pita pizzas this week (thanks Joliene!) they were pretty good and easy to make.
